Day 10

It's the last day of our French "intensive" course and the professor takes us to a fromagerie so that we may learn a little bit about cheese, which the French love oh so much and are like the ultimate experts in. The owner (not sure if he makes the cheeses too) closes shop for our exclusive lesson in cheese.

A little history on cheese:
  • There are two theories as to how cheese was discovered: 
1) Someone left milk in a jar for too long
2) While eating a calf, someone found cheese in the stomach since the milk it was taking in from momma was turning into cheese.

Basics on cheese:
  • ALL cheese come from one source: milk
  • Cheese come from the milk of three animals: cows, goats, and sheeps
  • A part of the animal's stomach is needed to make cheese so cheese is NOT vegetarian. Only cheddar and one other type of cheese are purely vegetarian.
  • There's creamy cheese, semi-hard cheese and hard cheese.
  • Some cheese (like roquefort) are injected with bacteria, like Penicillium fungi
  • The age of cheese vary greatly
The French usually eat cheese after every meal and right before dessert.
